A Little Earl Grey History
There was an actual (Charles) Earl Grey; in fact there were two. The second Earl Grey was the eldest son of the first one, and served as Prime Minister from 1830 to 1834. His claim to fame not only revolves around the development of Earl Grey Tea (reference the drowning Chinese son, and the gift to the Earl), but during his tenure as PM (1833), slavery was abolished in the British Empire.

How to Make Earl Grey Tea
Heat cool, filtered water to a high temperature of about 208° F. (Because black tea is already oxidized, you can’t really scald it.) Pour 8-10 ounces over one tea bag, preferably in a clear cup so you can see how strong it’s getting. For best flavor, steep at least two minutes, and no more than five. For many, drinking Earl Grey “neat” allows the delightful bergamot fragrance full bloom. Others prefer to add a splash of milk or cream, or a slice of lemon. Some enjoy the addition of a sweetener as well.
